We have a friend whose favorite holiday of the entire year is the Fourth of July. Patriotism noted (and respected and aside), she loves a holiday spent in shorts and bare feet, and where a lot of the cooking is done over a barbeque. By the men. We like her attitude, and in the spirit of July Fourth, we bring you some easy, fun recipes. Our kids love to help with these, and these two recipes are good for making with eager, but not necessarily careful or coordinated, hands. |

Patriotic Parfaits This is the simplest of all, and one the kids can probably do by themselves. Just take clear glasses (parfait glasses if you are so fancy as to have those) and alternate layers of strawberries, blueberries (or blackberries) and whipped cream. Depending on your taste, sweeten the whipped cream or leave it natural. Ditto with the strawberries. Ours don't |

Strawberry/Blueberry Shortcakes The idea here is to plop some whipped cream on shortcakes and toss on some strawberries and blueberries. If your strawberries are fabulous, simply slice them or just leave them alone. If they lack the sweetness and taste that you want, slice | them into a bowl and sprinkle with sugar. Stir gently and allow to rest for an hour or more. The easiest method: Buy some pre-made mini-shortcakes. Follow directions above. A little harder: Make your own shortcakes, either from Bisquick or from scratch. Finish as above.
